Holy cow. I am so glad beets are in season all summer long because I’ll be making this juice on the regular.

- 3 stalks of celery
And then I threw in some ground flax seed, but that is just a personal preference.
Really good. The ginger in this makes the whole thing so if you don’t like ginger, don’t do it.
Also, juicing spinach has to be the biggest waste ever. Maybe I’ll juice the other stuff and then throw it into the blender with the spinach next time.
I saw this on Pinterest and decided to try it. Seriously good stuff. Whoever thought of using crescent roll dough to make crust was a genius. It is like deep dish crust!
I’m working on taking my super secret carrot cake recipe and make it more diet friendly. The original carrot cake is like 550 calories a slice, which is partly why I keep the recipe super secret, so no one will skip out on the tastiness just because of the calories! LOL. So far I’ve killed it with the cakes but the cream cheese frosting is giving me problems. Hmmm…
This is going to sound weird, but 1/2 cup of chili beans, 1/6 cup of shredded low-fat mozzarella and 2oz of Target’s brand Healthy Smoked Honey Turkey breast mixed together is the most delicious 180 calories of my day. It is like a chili-dog with out the bread or the mystery meat.

As soon as I can get my body into working order I’m going to hit up the local bike shop and see about getting a better saddle and some drop bars. And maybe see about joining the local tri club. (Say whaaa?)
I decided to sleep in today (hence the brunch) because today is the last free day before the new quarter begins. Not going to lie, I barely made it through this past quarter alive. We have to keep a 3.3 gpa to stay in our program and I finished with a 3.4. Eeep! So I plan on bringing it in every way this quarter - both in my workouts and in my classes. I have high hopes for the next ten weeks. Time to get a move on!
But I made this Protein Cheesecake recipe the other day and is pretty dang delectable. The author even gives you ideas on how to make it other flavors. I’ve been trying out toppings for mine and I enjoy some sugar free strawberry jam on mine. You don’t have to add anything to it though, it tastes good just straight out of the pan. =)
